Pistachio Pudding Cookies






Pistachio Pudding Cookies







Soft, fluffy pudding and pistachio  cookies with cream cheese frosting. An easy treat that everyone will love!

Ingredients
  • 1 egg
  • ¾ cup granulated sugar
  • 1¾ cups all purpose flour
  • 1 tablespoon vanilla
  • 1/2 teaspoon salt
  • ¾ cup packed light brown sugar
  • 1 1/2 cups shelled chopped pistachios
  • 2 teaspoons baking powder
  • ¾ cup unsalted butter, softened
  • 1 (3 ounce) package pistachio instant pudding mix
  • 2-3 drops green food coloring (optional)

Instructions

First, preheat the oven to 375.

Then, in a large bowl, beat the butter and sugars until fluffy. Add the vanilla and the egg and beat until everything is well combined.

Stir in flour, pudding, baking powder and salt. Continue to mix until the dough comes together * just *.

Stir in the chopped pistachios and food coloring until the color is evenly distributed.

About a tablespoon at a time, spread the dough on an ungreased baking sheet, spacing the cookies about 2 ".

Bake for 9-11 minutes (10 is always perfect for me). Your cookies may seem slightly undercooked - that's ok !!! It is done. Overcooking removes the soft texture.

Let them cool for a few minutes before removing them on a wire rack to cool them completely.
