Trinidad Chicken Pelau


 Trinidad Chicken Pelau



A step by step guide to creating the unofficial national dish of Trinidad, pelau. Delicious caramelized chicken with rice and peas.


INGREDIENTS

2 pounds of chicken, dig small pieces

3 tablespoons of green seasoning

5 tablespoons sugar

2 cups of parboiled rice

1/2 cup chopped onions

1/2 cup chilies, chopped (pepper flavor)

2 garlic cloves, chopped

2 tablespoons chopped parsley

2 tablespoons chopped culantro

2 tablespoons chopped ginger

1/2 cup pumpkin

2 cans of green peas

2 tablespoons of salt

2 cups coconut milk (make your own)

2 glasses of water

1 tablespoon spaghetti sauce

2 teaspoons black pepper


INSTRUCTIONS:

1.Wash and clean the chicken, season with green spices and put aside .

2.Heat a thick skillet and add sugar, sprinkle evenly onto rock bottom of the pan.

3.Let the sugar caramelize until all the sugar is brown.

4.Add the seasoned chicken, stir to brown all chicken

5.Cook 2 to five minutes

6.Drain and add peas. Stir and cook for five minutes

7.Add rice and blend

8.Add coconut milk, water, pumpkin, paprika, shallots, garlic, ginger, parsley, salt, black pepper and spaghetti sauce .

9.Bring to a boil, then reduce heat.

10.Boil until the rice is partially cooked (about 30 minutes)

11.Add the culantro

12.Steam until rice is cooked

13.Use additional water if the rice must be cooked again

14.you'll season the meat as was common before cooking if you do not have green seasoning
