Prawn Pepper Fry
This simple pepper and shrimp recipe can be made in minutes. The shrimp are roasted with freshly cracked black pepper and finely chopped curry leaves. It is finally finished with a spoonful of ghee. It goes so well as a side dish with rice.
INGREDIENTS
- 1 sprig of curry leaves
- 2 tablespoons of oil
- 500g peeled and deveined shrimp
- 1 teaspoon of coriander seeds
- 1 teaspoon of red pepper powder
- 1/4 teaspoon garam masala
- 1 tablespoon of black peppercorns
- 3 teaspoons of ginger garlic paste
- 1 teaspoon of cumin seeds
- 1/4 teaspoon fennel seeds / sombu / saunf
- 1/2 teaspoon of turmeric powder
- salt to taste
INSTRUCTIONS
First,clean the prawns thoroughly and cook them with the turmeric in a pan. The shrimp will give water on their own. Cook until all the water in the shrimp is dry. Once the water is dry, turn off the flame.
Then, lightly dry roast the cumin seeds, coriander seeds, black peppercorns, fennel seeds and transform them into a fine powder in a dry mill.
Heat the oil in a non-stick pan and add the curry leaves.
Now add the ginger and garlic paste and fry over low heat until the raw smell is gone.
Discard the shrimp and fry them for a few more minutes. Do not overfry as the shrimp will get tough if you overcook them.
Add the ground spice powder, red chilli powder, garam masala powder, salt and mix well.
If necessary, add water to prevent the masala from burning.
When the raw masala smell is gone, turn off the flame and serve hot.
