Applesauce Bundt Cake

This applesauce bundt cake is amazing! So chewy and full of apple cinnamon flavor! Super easy to make a recipe from a bowl!

INGREDIENTS

  • 2 cups of brown rice flour
  • 1 ½ teaspoon of baking soda
  • 2 eggs
  • ½ teaspoon of salt
  • ½ cup of honey, orange blossom if available
  • Zest of one orange or one lemon
  • 2 cups unsweetened applesauce, preferably homemade
  • 1/3 cup avocado oil or organic canola oil
  • ½ teaspoon of pumpkin pie spice or cinnamon

INSTRUCTIONS

First, preheat the oven to 350 degrees F. Coat a large pot with cooking spray.

Then, puree the eggs, zest, applesauce, honey and oil in a blender or food processor. Whisk together flour, baking soda, pumpkin pie spice and salt in a large bowl. Create a well in the center of the dry ingredients and pour in the wet ingredients. Gradually incorporate the dry into the wet and stir until combined. Immediately divide into the prepared pan and transfer to the oven. Bake in the preheated oven until the cake is golden brown and the cake pops up to the touch, 50 to 55 minutes.

Let cool in pan for 10 minutes before unmolding on a cooling rack. Happy Cooking Time.
