Southern Shrimp and Cheesy Grits
Shrimp & Cheesy Grits is decadent ... pure southern decadence. But every now and then, it's great to be a little decadent. This dish is an explosion of flavors that you just have to taste to believe. Unbelievable!
INGREDIENTS
CHEESE GRITS
- 4 cups of water
- 3 tablespoons of butter
- 2 tablespoons of heavy whipping cream
- 1/4 teaspoon of salt
- 1 cup of quick grains
- 1 1/2 cup grated sharp cheddar cheese
Shrimp
- 1 teaspoon of dried parsley
- 2 teaspoons of Cajun seasoning
- 1 tablespoon of vegetable oil
- 3 green onions, chopped
- 1/8 teaspoon ground cayenne pepper
- 3 garlic cloves, minced
- 1 finely chopped red pepper
- 1/4 cup low sodium chicken or vegetable broth
- 6 slices of smoked bacon
- 1 pound large shrimp, peeled and deveined
INSTRUCTIONS
First, bring the water to a boil; add the oatmeal and salt. Cook 5 to 7 minutes or until tender. Remove from heat, stir in the butter, cream and cheddar cheese.
Then, in a large skillet over medium heat, cook the bacon until crispy. Place on paper towels to drain; reserve the bacon fat. Roughly chop the bacon when cool. Add the shrimp to the bacon fat over medium heat. Sprinkle with Cajun seasoning and cayenne pepper. Flip the shrimp after a minute; and cook for another minute. Remove to a plate.
Add vegetable oil to the pan over medium heat. Add the red pepper and cook until slightly tender; 2-3 minutes. Reduce the heat to medium-low. Add the green onions and garlic and cook for 1 minute.
Add the chicken broth to the pan and stir. Return the shrimp and bacon to the pan and heat 1 minute.
Pour the shrimp mixture over the cheese grits. Happy Cooking Time.
