- 4 cups half and half
- 4 medium bananas, sliced,
- 1 can 3.4 oz Banana Instant Pudding
- 1 teaspoon of pure vanilla extract
- 1 tablespoon of lemon juice
- 4 tbsp crushed vanilla wafers
- 1 can 3.4 oz vanilla instant pudding
- 40 whole vanilla wafers divided
- 2 prepared graham cracker crusts, 9 oz
- 1 8 oz block of Neufchatel cheese, softened
- 12 oz frozen whipped topping, thawed OR 3 cups fresh whipped cream
Instructions
First, using a stand or hand mixer, whisk together the two packages of pudding mix with half and half until thickened but still pourable.
Then, add the softened Neufchatel cheese and 1 teaspoon of vanilla. Whisk over medium-high heat until completely smooth.
Mix the banana slices with the lemon juice. Stir pudding with 1/3 of the hand-whipped topping until blended.
Pour into graham cracker crusts. Distribute evenly.
Line the edge of each pie with whole vanilla wafers, about 20 per pie. Add more if you want.
Frost with the remaining whipped topping and sprinkle each pie with 2 tablespoons of crushed vanilla wafers.
Refrigerate for at least 4 hours before cutting, keep leftovers cool.
Happy Cooking Time.
