Classic Farmhouse Fruit Cake Recipe
Sometimes it's the simplest cake that has the biggest impact. And this classic farmhouse fruit cake is certainly one of them. To be enjoyed with a cup of tea in good company!
Ingredients
- 4 medium eggs
- Pinch of salt
- 1/2 teaspoon ground ginger
- 550 g of dried fruit A selection of your choice according to weight eg. Raisins, blackcurrants, raisins, candied citrus peels, candied cherries, cranberries
- 1/4 teaspoon ground cloves
- 300 g unsalted butter
- 450 g automatic yeast flour
- 1/2 pint of semi-skimmed milk semi-fat milk
- 1/4 teaspoon ground nutmeg
- 1/4 pint of strongly brewed tea
- 1/2 teaspoon ground cinnamon
- 300 g of caster sugar Extra fine sugar
Instructions
First, place the dried fruit in a bowl.
Then, pour over the hot, strongly brewed tea.
Stir and cover for at least 1 hour.
Grease and line your cake pan.
After 1 hour, preheat the oven to 150 ° C.
Add the flour, spices and salt to a bowl and mix.
In a stand mixer, beat together butter and sugar until smooth and fluffy.
While mixing, drain the dried fruits and place them on a clean tea towel. Pat sec.
To the butter and cream mixture, add 1 egg at a time.
With the last egg, add a few spoons of flour, this will prevent it from curdling.
Now add the flour and milk in 2 batches to make sure it is well mixed. Half the flour and half the milk first and mix and repeat.
Stir in the dried fruits. TOP TIP - To prevent the fruit from falling into the bottom layer in a little flour before adding it.
Add the mixture to the cake and even out the top.
Set the timer for 1:30 a.m.
When the timer goes off, cover the top of the cake with foil to prevent it from burning.
Continue cooking for another 30 minutes.
Take out the cake and check with a skewer. If it comes out clean, the cake is done. Otherwise, return to the oven and bake in stages of 10 to 15 minutes until the cake is cooked. Baking can take between 2 and 3 hours depending on your oven and the cake!
Once the skewer has been removed clean, remove it from the oven and let cool for a few minutes.
Remove the cake pan and let cool on a wire rack. This cake is excellent served hot or cold, so enjoy it after it stops steaming.
