Easy Spanakopita Bites
These tiny bites of spanakopita make the best appetizers and taste like little bites of spring. They're semi-homemade, using mini phyllo shells bought from the grocery store, which means less time in the kitchen and more time to enjoy the party.
INGREDIENT
The main ingredient
1 mini Athena Fillo shell package
9 cups chopped baby spinach
2 tablespoons butter
1 tablespoon of vegetable oil
1/2 medium onion, chopped
2 garlic cloves (chopped)
salt and pepper
Egg mixture
2 eggs
1/2 cup crushed good quality feta cheese
1/3 cup grated parmesan
1/4 cup chopped dill
INSTRUCTIONS
1.Sauté the onions in vegetable oil and butter over medium heat, about 3-4 minutes.
2.Add the garlic and spinach, saute for five minutes, until there's no liquid left. Add the salt and paper sufficiently.
3.Transfer the spinach to a plate and place it during a cool place for a couple of minutes.Meanwhile, prepare the egg mixture by beating the remaining ingredients together.
4.Add spinach to the egg mixture. Move.
5.Divide the filling among the 15 Fillo shells. Bake at 350F for quarter-hour . Let cool slightly before serving.
