Baked Feta with Tomatoes and Olives









This oven-baked feta appetizer makes in minutes with just a handful of ingredients - olives, sun-dried tomatoes, fresh garlic, olive oil and herbs. Cook everything with a block of feta cheese until hot and creamy, then serve with crispy crostini!

Ingredients

  • 1 teaspoon minced garlic
  • 1 tbsp. chopped basil
  • 8 oz. block of feta
  • 1 1/2 tsp. Chopped parsley
  • 1 tbsp. olive oil
  • ¼ cup thinly sliced red bell pepper
  • 1/3 cup Kalamata olives, pitted and halved
  • 1 1/2 cups cherry tomatoes, cut in half
  • 1/8 cup minced red onion (or 1/4 cup if you really like onion)
  • 1 teaspoon chopped oregano (or ½ tsp dried)
  • ¼ tsp. 1/2 tsp black pepper, crushed

Instructions

First, preheat the oven to 205 ° C (400 ° F).

Then, combine all the ingredients other than the feta in a small bowl.

Place the block of feta in a small rimmed baking dish. Add the tomato mixture on top of the feta, letting it spill over into the pan.

Bake for about 20 minutes until the vegetables are roasted and the feta is soft. Serve with crackers and / or vegetable crudités.
