Pesto Grilled Shrimp
These easy pesto grilled shrimp use pesto as a quick marinade for the shrimp. Fire up the grill and make these easy grilled shrimp for dinner tonight!
Ingredients
- 1 tbsp toasted pine nuts
- 2 tablespoons of olive oil
- 1 pound of shrimp, peeled and deviated
- 2 tablespoons of Parmigiano Reggiano (Parmesan), grated
- salt and pepper to taste
- 1/2 cup basil, packed
- 1 small clove of garlic
- 1 tablespoon of lemon juice (~ 1/4 lemon)
Directions
First, combine basil, garlic, pine nuts, Parmesan, oil, lemon juice, salt, and pepper in a food processor or blender until smooth.
Then, marinate the shrimp in the pesto for at least 20 minutes, until overnight, in the refrigerator.
Roast the shrimp and grill them over medium-high heat until cooked through, about 2-3 minutes per side. Happy Cooking Time.
