Spicy Halloumi Curry with Potato


This halloumi potato curry is extremely spicy and warm. Serve with rice and naan for a vegetarian dish perfect for a busy work night.

INGREDIENT
250 g Halloumi, diced
1 tablespoon oil
1 chopped onion
4 garlic cloves, puree
2 teaspoons grated ginger
1 chili, seeded and chopped
1 paprika, sliced
1 tablespoon flavorer
1 teaspoon cumin
1 teaspoon coriander
250 g chopped potatoes
2 cans of 400g chopped tomatoes
Rice and Naan to serve

Instructions
1.Frying halloumi: Start by frying halloumi until it's golden brown on all sides. Remove and place on a plate while you prepare other curries.
2.Start making the sauce: Heat the oil and add the onions, saute 5 minutes until softened, add garlic, ginger, pepper and chilies, saute for five minutes. Add all the spices and potatoes and stir to coat everything nicely.
3.Finish the sauce: Pour the chopped tomatoes and convey to a boil. Cook for quarter-hour until thickened, taste and check the seasoning.
4.To serve: stir within the halloumi and cook for a couple of more minutes before serving with rice and naan.
