Patty Melts with Secret Sauce

INGREDIENTS

  • ½ cup Secret Sauce
  • 1 teaspoon Kosher Salt
  • ½ teaspoon Black Pepper ground
  • 6 slices Cheddar Cheese
  • 12 slices Sourdough Bread
  • 8 tablespoons Unsalted Butter
  • 1 ½ pounds Beef Mince
  • 2 teaspoons Worcestershire Sauce
  • 3 Onions thinly sliced

Secret Sauce:

  • ½ teaspoon Hot Sauce
  • ¼ cup Mayonnaise
  • ¼ cup Dijon Mustard
  • 1 tablespoon Barbecue Sauce

INSTRUCTIONS

First, in a small bowl, combine the mustard, mayonnaise, barbecue sauce and hot sauce. Store, covered, in the refrigerator for up to 3 days.

Then, in a large bowl, combine ground beef, Worcestershire, salt and pepper. Shape the ground beef into 6 oval patties.

In a medium cast iron skillet, melt 2 tablespoons of butter over medium heat. Add the onion. Cook, stirring occasionally, until onion is tender and golden, about 35 minutes.

In a large cast iron skillet, cook the patties over medium-high heat until golden brown and cooked through, about 2 minutes per side. Remove the pan from the heat. Remove the patties from the pan; wipe out the pan.

Layer 1 slice of bread with 1 tablespoon of secret sauce, 2 to 3 tablespoons of caramelized onions, 1 slice of cheese, 1 patty and another 1 tablespoon of secret sauce. Garnish with another slice of bread. 
Repeat with the rest of the bread, the secret sauce, the caramelized onions, the cheese and the patties.

Heat the pan over medium-high heat. Melt 2 tablespoons of butter in the pan. Working in batches, cook sandwiches, turning once, until golden brown and heated through, about 3 minutes per side. Add the rest of the butter to the skillet as needed. Happy Cooking Time.
