NEW POTATOES WITH CREAMY DILL SAUCE
A side dish of potatoes with a dill sauce! Potatoes with dill cream sauce have always been a Swedish favorite - perfect with fish or grilled meat!
Ingredients
- 1/4 cup butter
- 4 cups heavy cream
- 1/2 - 1 teaspoon of salt
- 1/8 teaspoon nutmeg
- 1 cup finely chopped onion
- 1/2 teaspoon of pepper
- 3 lbs new potatoes
- 1/4 - 1/2 cup chopped fresh dill do not use a stem
Instructions
First, in a large, heavy-based saucepan, melt the butter over medium heat.
Then, add the finely chopped onions and sauté until the onions are golden brown. (do not brown too much)
Slowly fold in the heavy cream.
Stir in the dill. (I only use the feathery ends of the dill, not the stems)
Add salt, pepper and nutmeg.
Simmer over low heat for about 30 minutes until the sauce thickens a bit.
While the dill sauce simmers, prepare new potatoes.
Wash the potatoes removing stains.
Add to a large pot of cold water (enough to completely cover the potatoes).
Add a teaspoon of salt and cook over medium-high heat until the potatoes are tender and not soft.
Drain and serve with a creamy dill sauce.
