Sriracha Tuna Salad Wraps
Sriracha tuna wraps are a great alternative to spicy tuna rolls and are light and refreshing. They are perfect for lunch and come together in just 5 minutes.
Ingredients
- 1 cucumber
- 1 red pepper
- 1/3 cup regular real mayo
- 2 cans (5 ounces each) Genova Albacore Tuna in Olive Oil in Easy Open Cans
- 1-2 large avocados
- 1 regular lime 1/2 teaspoon zest, 2 and 1/2 tablespoons juice
- 1 bunch cilantro
- 1 teaspoon white sugar
- 2 and 1/2 teaspoons Sriracha
- 1 heaping cup matchstick carrots
- 4 large tortillas
- Optional: salt and pepper, fresh lime
Instructions
First, drain the tuna well.
Then, in a bowl, combine the mayonnaise, Sriracha, lime zest, lime juice and white sugar. Add a pinch of salt and pepper to taste and whisk until smooth. Add the tuna and stir gently until everything is combined.
Prepare the vegetables: thinly slice the avocados, cut the cucumber into matches, thinly slice the red pepper and roughly chop a large handful of coriander.
Arrange the tortillas. Divide the tuna mixture evenly between the tortillas.
Garnish the oat tuna with equal slices, matched carrots, cucumber, red pepper and coriander.
Add salt and pepper and fresh lime juice if desired.
Drive well and enjoy immediately. (Do not prepare them in advance as the tuna will be soggy with the tortilla.)
