Magic Crispy Baked Shrimp
We all have our favorite dinners. The ones we turn to when we need something on the table in less than half an hour that we barely need to think about. It couldn't be easier and it couldn't be more delicious either. It's a quick cooking method that results in Butter, Lemon, Garlic and CRISPY shrimp every time. So simple and so good - it’s a real winner.
INGREDIENTS
- 1 brown shallot, minced
- Salt and pepper, to taste
- 1 kg (2 pounds) shrimp, peeled, deveined and tails on or off
- 1/3 cup melted butter, divided
- 4 cloves garlic, minced
- 1/3 cup Panko breadcrumbs
- 1/4 cup fresh chopped parsley leaves
- 2 tablespoons grated parmesan cheese
- 2 tablespoons freshly squeezed lemon juice
- 2 tablespoons white wine (optional -- sub with extra lemon juice or chicken stock
- 1/2 teaspoon crushed red pepper flakes or more, to taste
- Lemon wedges to serve
INSTRUCTIONS
First, peat oven to 425 ° F (220 ° C). Combine the shrimp, lemon juice, white wine, shallots, 2 tablespoons of melted butter, 1 teaspoon of salt and 1/4 teaspoon of pepper in a pan or baking dish. Mix well to coat the shrimp.
Then, starting from the outside edge of your pan or pan, arrange the shrimp in a single layer towards the center of the pan. Put aside.
In a small bowl, combine the remaining melted butter, breadcrumbs, garlic, Parmesan, red pepper flakes and 2 tablespoons chopped parsley; mix well.
Sprinkle breadcrumb mixture over shrimp and bake for 12 minutes, or until hot and bubbly, and shrimp are “just” cooked. Change oven settings to broil or broil for about an additional minute, until the top is crisp and golden.
Garnish with the remaining parsley, squeeze a drizzle of lemon juice and serve with lemon wedges. Happy Cooking Time.
