Easy Gingerbread Cake
Quick and easy gingerbread recipe made with simple ingredients. This classic old-fashioned gingerbread cake is chewy, chewy, loaded with molasses and spices.
Ingredients
- 2 large eggs
- ½ cup sugar
- 1 teaspoon baking soda
- 2 cups flour
- 1 teaspoon ground cinnamon
- 1 ½ teaspoon ground ginger
- 1 cup molasses
- ⅛ teaspoon ground nutmeg
- 1 cup whole milk
- 1/2 cup butter (room temperature… plus additional butter for greasing the pan)
- ⅛ teaspoon ground allspice
Instructions
First, preheat the oven to 375 degrees. Prepare a 9-inch square pan by greasing the bottom, sides and corners with butter.
Then, put the milk in a saucepan and heat until it begins to boil. Immediately remove from heat and stir in baking soda. Put aside.
In a large bowl, whisk together molasses and eggs.
Add the butter to the bowl and stir, mashing the butter around the sides of the bowl to help reduce the size of the lumps. A few tufts will remain.
In another bowl, combine the sugar, flour and spices. Add the dry ingredients to the wet ingredients alternately with the milk and whisk until smooth.
Transfer the dough to the baking dish.
Bake for 30 minutes or until a toothpick inserted in the middle comes out clean. Place the pan on a wire rack and let cool for about 30 minutes before cutting into squares and serving.
Top with whipped cream, caramel sauce, powdered sugar or your desired toppings. Happy Cooking Time.
