Chicken Parmesan Meatballs







Chicken Parmesan Dumplings are your favorite chicken parmesan made into these tender and tasty baked chicken dumplings, topped with the perfect mix of ooey gooey cheese.

INGREDIENTS

  • 1 egg
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1/2 cup Panko breadcrumbs (and about 3/4 cup more breadcrumbs for rolling later)
  • 1/4 cup olive oil, divided
  • 1 teaspoon Italian seasonings
  • 1/2 cup shredded mozzarella
  • 1/2 teaspoon crushed red pepper
  • 1 (26 ounce) jar marinara sauce
  • 1 lb ground chicken
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons basil, torn (optional)

INSTRUCTIONS

First. in a large bowl, combine the chicken, egg, parmesan, breadcrumbs, garlic powder, Italian seasonings, salt, pepper and red pepper. Roll into 1 1/2 inch balls.

Then, heat 2 tablespoons of oil in a large ovenproof skillet over medium heat. Roll half the meatballs in the Panko breadcrumbs and brown them on each side in the oil. Add more oil as needed as you go. Remove from pan and set aside. Wipe the Panko bread crumbs and heat the remaining 2 tablespoons of olive oil over medium heat. Roll the remaining meatballs in the Panko breadcrumbs and brown them on each side. Remove from the mold.

Preheat the oven to 350 degrees. Pour the marinara sauce into the ovenproof pan (or any baking dish will do) and place the meatballs over the sauce. Cook the meatballs for 20 minutes, sprinkling the mozzarella on top for the last 5 minutes of cooking. Garnish with basil and serve over pasta. Happy Cooking Time.
