Oven Baked Salmon Recipe
This oven baked salmon recipe makes tender, flaky salmon in a delicious lemon and garlic butter sauce. Roasted with asparagus tips, this low-carb dinner idea is full of flavor and comes together in one pan.
Ingredients
- 2 tsp olive oil
- 2 Tbsp fresh lemon juice
- 2 garlic cloves , minced
- 1/2 tsp honey
- 1/4 cup low-sodium chicken broth
- 2 Tbsp minced fresh parsley
- Salt and freshly ground black pepper
- 4 (6 oz) skinless salmon fillets (about 1-inch thick)
- 3 Tbsp + 1 tsp unsalted butter , diced into 1 Tbsp pieces
- Lemon slices for garnish (optional)
Instructions
First, remove the salmon fillets from the refrigerator and let stand at room temperature for 10 minutes.
Then, meanwhile, prepare the lemon garlic butter sauce. In a small saucepan, melt 1 tsp. Teaspoon butter over medium heat.
Add the garlic and sauté until lightly golden, about 1 to 2 minutes. Pour the chicken broth and lemon juice.
Simmer the sauce until it is reduced by half (to about 3 tablespoons), about 3 minutes. Stir in the butter and honey and whisk until smooth, reserving the sauce.
Dab both sides of the salmon with paper towel, season both sides with salt and pepper.
Heat olive oil in a 12-inch (heavy) non-stick skillet over medium-high heat.
Once the oil is shimmering, add the salmon and cook for about 4 minutes on the first side until it is golden brown at the bottom, then flip and cook the salmon on the opposite side until the salmon is cooked, about 2 to 3 minutes longer.
Plate of salmon (leaving the oil in the pan) and sprinkle generously with butter sauce, sprinkle with parsley and garnish with lemon slices if desired. Serve immediately. Happy Cooking Time.
