DATE AND WALNUT LOAF
The Nutcracker Date Cake is a healthier, egg-less, healthier cake made with whole wheat flour and without the addition of refined sugar.
Ingredients
- 85 g Caster Sugar
- 225 g Self-raising Flour
- 1 tsp Bicarbonate of Soda
- 120 ml Boiling Water
- 1 Free-range Egg (beaten)
- 85 g Walnuts (roughly chopped)
- 225 g Pitted Dates (roughly chopped)
- 85 g Margarine or Butter (softened)
Instructions
First, place the dates, baking soda, margarine and sugar in a large bowl and pour over boiling water.
Mix to break up the margarine, then set aside until the boiling water has cooled.
Then, meanwhile, line a 2 lb loaf pan with parchment paper and preheat your oven to 170 ° C (150 °
C for fan assisted or Gas Mark 3 ovens).
Once the mixture has cooled, add the egg and nuts, mixing to combine. Sift the flour and mix to create a dough.
Transfer the dough to your pre-lined pan and bake in your preheated oven for 1 hour 15 minutes.
Remove from oven and let cool in pan. Serve immediately or for better taste, keep the bread in an airtight container for a few days before serving. Happy Cooking Time.
