Baked Zucchini Fries
Baked zucchini fries appetizer with homemade honey mustard sauce. This recipe makes crispy and crunchy sticks using panko breadcrumbs.
INGREDIENTS
- 1 egg
- 1 tsp garlic powder
- 1/4 tsp salt
- 1 tsp Italian herb blend
- 2 medium zucchini
- 1 cup almond flour
- 1/2 cup grated Parmesan cheese
INSTRUCTIONS
First, preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.
Then, cut the zucchini in half crosswise. Then cut again lengthwise into sticks.
Break the egg in a shallow bowl and lightly beat it with salt.
Add almond flour, parmesan, garlic and herbs to a separate shallow bowl and toss to combine.
With one hand, dip a piece of zucchini in the porridge, allow the excess egg to drain and transfer to the almond / parmesan mixture. With your other hand, press the zucchini in the almond / parmesan mixture to coat. Place on baking sheet in a single layer. Repeat this process until all of the zucchini pieces are coated. Spray with olive oil.
Bake for 25 to 30 minutes, turning halfway through cooking. Serve immediately. Happy Cooking Time.
