Chicken with Basil Cream Sauce








Chicken with Basil Cream Sauce is a healthy and easy weekday meal that is flavorful and light in calories!

Ingredients

  • 1/2 cup milk
  • 1 clove garlic minced
  • 1/8 teaspoon black pepper
  • 3 tablespoons butter
  • 1/2 cup chicken broth
  • 1/3 cup grated Parmesan cheese
  • 1/2 cup dried Italian bread crumbs
  • 4 boneless skinless chicken breasts
  • 1 cup heavy whipping cream
  • 1/4 cup chopped fresh basil

Instructions

First, pound each chicken breast to a uniform thickness of 1/2 inch.

Then, place milk and breadcrumbs in separate, shallow bowls.

In a large skillet, heat the butter over medium heat. Dip the chicken in the milk, then coat with the breadcrumbs. Cook chicken in butter, on both sides, until cooked through (about 10 minutes). 
Remove from pan and keep warm.

Add the garlic to the pan and cook for 30 seconds over medium heat. Add the chicken broth to the pan. Bring to a boil over medium-high heat and stir to detach the golden pieces from the pan. Stir in the cream. Boil and stir for 1 minute. Lower the temperature.

Add the parmesan, basil and pepper. Stir the sauce and cook until it is very hot. Remember that for a thicker sauce, you just need to cook it longer. I cooked mine for about 5 minutes. Turn off the heat and let stand for about a minute and the sauce will thicken even more.

Serve the chicken with the sauce poured over the top and the additional chopped basil, if desired. Happy Cooking Time.
