SIMPLE SAUTÉED ZUCCHIN
Simple
sautéed zucchini with onions and parmesan. Healthy and simple, it's the perfect
summer side dish recipe!
INGREDIENTS
- 1/2 tsp salt + pepper to taste
- 1 1/2 tsp red wine vinegar or lemon juice
- 2 garlic cloves, minced (about 1 1/2 tsp)
- 2 tsp olive oil
- 2 medium zucchini (500g), cut into 1cm coins and halved
- 1 tbsp chopped herbs, optional (I used mint and basil)
INSTRUCTIONS
First, add
the olive oil to a large saucepan over medium to high heat. When hot, add
enough zucchini slices to cover the pan with a single layer. Cook until the
underside is golden, then turn the slices over and cook again until they are
golden. Remove the zucchini from the pan and do the same with th
remaining
slices. Add a little olive oil if necessary.
Then, when
both sides are almost golden on the second batch, add the garlic and cook for
another minute. Return the first batch to the pan and season with salt and
pepper. Add red wine vinegar and herbs if using them in the pan before serving.
