Pineapple Sunshine Cake
A fluffy and
chewy yellow cake incorporated into the pineapple, covered with a soft, creamy
frosting. It's so good that I always get requests for the recipe.
Ingredients
Cake:
- 4 eggs
- 1/2 cup oil, (I used vegetable oil)
- 1 box yellow cake mix
- 1 (8 oz) can crushed pineapple with juice
Frosting:
- 1 small box instant vanilla pudding
- 1 (8 oz) can crushed pineapple with juice
- 1 (8 oz) container whipped topping, thawed
Instructions
First, preheat
the oven to 350 degrees. Spray a 9x13 pan with cooking spray.
Then, in a
large bowl, combine the cake mix, eggs, oil and 1 can of crushed pineapple with
the juice. Mix well.
Pour into
the prepared pan and bake for 25-30 minutes, or until a toothpick inserted in
the center of the cake comes out clean. Leave to cool completely on a wire
rack.
In a medium
bowl, fold together the whipped topping, the can of vanilla pudding and 1 can
of pineapple mashed with the juice. Spread over the top of the cooled cake.
