Baked Honey Mustard Corned Beef
Salted beef
is dried in a mixture of salt, so it can be very salty, depending on the
source. We recommend that you bring salted beef to a boil in plain water and
discard the water (repeat for less salt) before switching to the cooked
version.
Ingredients
- 1 tablespoon (15 ml) honey
- 1 tablespoon (15 ml) whole grain mustard
- ¼ cup (50 g) dark brown sugar
- 2 pounds (908 g) corned beef
- 5 tablespoons (75 ml) dijon mustard
Instructions
First, set
the oven rack in the central position. Preheat to 350 ° F (177 ° C).
Then, remove
the corned beef from the packaging by throwing away the package of spices.
Dry the meat
with paper towels, then place the fatty side up on a rack fixed on a roasting
pan.
Add about 1
inch of water to the bottom of the pan, this will prevent the juices from
burning during cooking.
Mix whole
grain mustard, Dijon mustard and honey. Evenly distribute 3 tablespoons (about
half) of the mixture over the meat.
Sprinkle 2
tablespoons of brown sugar on top of the roast.
Cover the
meat and the pan completely without paper.
Cook the
corned beef until tender and the internal temperature reaches 160ºF (71ºC),
about 75 minutes. Add more time if necessary to cook well.
Carefully
remove the pan from the oven and transfer the corned beef to a baking sheet
lined with aluminum foil.
Preheat the
broiler oven.
Top the
corned beef with the rest of the mustard mixture, then sprinkle with 2
tablespoons of brown sugar.
Cook until
the top turns golden brown, about 3 to 5 minutes.
Remove the
beef from the oven and let stand for 10 minutes on a cutting board. Slice
against the grain and serve hot.
