Keto Creamed
Spinach is a comforting side that is a spicy touch on traditional creamed
spinach. Instead of just cream, the spinach is mixed with pepperjack cheese and
spices, then baked to make this exceptional vegetarian side dish that goes well
with most meals!
INGREDIENTS
- 1 lb baby spinach
- 2 garlic cloves
- 2 ounces cream cheese
- 1/4 cup heavy cream
- 1/4 cup grated parmesan cheese
- Salt and pepper to taste
- 1 tablespoon butter
- 1/4 small onion thinly sliced
- Pinch nutmeg
INSTRUCTIONS
First, heat
the butter in a 10.5 "cast iron pan, once hot add the garlic and onion.
Cook 3-4 minutes until softened.
Then, add
spinach and cook 3-4 minutes until reduced in size. Add the heavy cream and
cream cheese, cook until the spinach is very wilted, then stir in the Parmesan,
a pinch of nutmeg and season with salt and pepper to taste. Happy Cooking Time.
