BROCCOLI & CHEESE QUINOA BITES
These
broccoli and cheese bites of rice are healthy, plentiful and super
kid-friendly!
INGREDIENTS
- 1 teaspoon of salt
- ¾ cup of quinoa
- 1 cup of onion, diced
- ½ teaspoon of oregano
- 2 eggs
- 2 cloves of garlic, minced
- 2 cups of broccoli, finely diced
- ½ teaspoon of pepper
- 1 ½ cups of broth
- 1 cup of cheddar cheese, plus extra for topping if desired
INSTRUCTIONS
First, preheat
the oven to 350 degrees F. Generously grease a muffin pan with cooking spray.
Then, bring
the broth to a boil in a medium saucepan. Add the quinoa, simmer and cook
covered until all the liquid has been absorbed. Stir every few minutes. Once
done, remove from heat and let stand, covered, for 10 minutes. Mix with a fork,
then place in a large bowl to cool. You can also cook quinoa in your instant
pan using THIS method!
Once the
quinoa is cold enough to handle, add the broccoli, cheddar, onion, garlic,
oregano, salt, pepper and eggs. Mix until the mixture is complete.
Divide the
quinoa mixture evenly among the 12 muffin pan cavities.
Garnish with additional
cheese if desired.
Bake for 20
minutes. Let cool slightly. Happy Cooking Time.
