Instant Pot Meatloaf Mashed Potatoes
Instant
meatloaf and mashed potatoes is an easy and delicious dinner that's ready in
less than an hour. It is one of the best comfort foods cooked at the same time
in the pressure cooker.
INGREDIENTS
For the
Meatloaf:
- 2 eggs
- 2 tsp garlic powder
- 2 tsp dried parsley
- 2 lb. ground beef (I used a lean ground beef)
- 1/2 cup honey bbq sauce
- 1/2 cup onion, diced
- 1 cup breadcrumbs
- 1 tsp salt and pepper
For the
Meatloaf Topping:
- 1/3 cup ketchup
- 2 tbsp mustard
- 2 tbsp brown sugar
For the
potatoes:
- 4 tbsp butter
- 1 cup chicken broth
- 3/4 cup sour cream
- 1 tsp garlic powder
- salt and pepper to taste
- 3 lbs. yellow potatoes, washed and quartered
- 1 cup half and half
INSTRUCTIONS
First, start
by placing the potatoes in quarters at the bottom of your pressure cooker in an
even layer. Pour the chicken broth over the top. Place the grill provided with
your pressure cooker on top so that it lies flat.
Then, combine
the ingredients for the meatloaf (minus the filling) in a large bowl until they
are well combined. Shape the meat mixture into a loaf and place it on aluminum
foil. Shape the foil up and around the edges of the meatloaf, creating a pocket
for it. Place the meatloaf on top of the grill in the pressure cooker and close
the lid.
Make sure
the steam outlet is closed and put the pressure cooker in manual mode for 20 to
25 minutes *. When cooking is finished, use the quick release method to let the
steam escape. Check the meatloaf for the internal temperature of 155 degrees F.
Carefully
lift the meatloaf from the pressure cooker and place it on a baking sheet. Mix
the ingredients for the filling and brush the meatloaf. Place the meatloaf
under the grill for only 3 to 4 minutes, until the top is sparkling and
caramelized.
Meanwhile,
add the remaining ingredients (half and half, butter, sour cream, garlic
powder, salt and pepper) to the instant pan and mash the potatoes until smooth
and creamy.
Serve the
sliced meatloaf with the mashed potatoes.
