Grilled Mozzarella Sandwich





Turn grilled cheese into an adult dish with creamy buffalo mozzarella and fresh thyme chunks.

Ingredients

For the Sandwich
  • 1 large tomato sliced
  • 4 oz mozzarella cheese sliced
  • 4 slices sourdough bread
  • 2 oz roasted red peppers jarred

For the Pesto
  • 1/4 cup olive oil
  • 2 cloves garlic peeled
  • 2 tablespoons walnuts
  • Salt and pepper to taste
  • 1/2 cup fresh basil leaves
  • 2 tablespoons grated Parmesan

Instructions

First, to make the pesto, place the basil, garlic, nuts and Parmesan cheese in the food processor; season with salt and pepper, to taste, and mix. While the food processor is running, slowly pour the olive oil into the mixture to allow the olive oil to emulsify.

Then, spread the pesto evenly over the 4 slices of bread and place the bread on the panini machine or in a toaster for 2 minutes.

Place the mozzarella cheese, tomatoes and roasted red peppers on slices of bread and allow the cheese to melt and soften the vegetables.

Once the cheese is melted, close the sandwich, cut and serve immediately. Happy Cooking Time.
