Classic Ham Salad
The best
thing about leftover ham is that it gives you the opportunity to make a ham
salad! You can whip it in the food processor in a flash.
Ingredients
- 3/4 cup mayonnaise
- 1 tablespoon prepared mustard
- 1 hard-boiled egg
- 2 teaspoons finely chopped onion
- 1 stalk celery, roughly chopped
- salt and pepper (to taste)
- 2 teaspoons sweet pickle relish (optional)
- 1 1/2 pounds boneless cooked ham (leftover or purchased thick slab, trimmed of fat and diced)
- assorted crackers and/or soft rolls
Instructions
First, fut
the ham, egg, celery and onion in a blender or food processor (season with a
little fresh black pepper)
Then, pulse
(short and rapid pulses) 20-25 times for chopping.
Combine
remaining ingredients in a separate bowl (sweet pickle relish, mayonnaise and
mustard)
Add the
mixture of chopped ham.
Cover and
refrigerate. I have cooled it for several hours, it definitely improves because
it cools for a while. Happy Cooking Time.
Note: Give
it a taste test before serving. I didn't add extra salt to mine because my ham
was sufficiently salty, so extra salt would have been too much. But adjust it
to your taste. Serve on rolls, cookies or as a spread for crackers!
