CHERRY PIE BITES
These super
delicious cherry pie bites are so super simple. Since they are made with
store-bought croissant rolls, they can be made in a jiffy. Perfect for
breakfast or even dessert.
Ingredients
For the
crust:
- 2 sticks of butter
- 2 teaspoons white sugar
- 6 - 8 tablespoons ice water
- 2½ cups all purpose flour
- Dash of salt
For the
filling:
- 8 ounces all natural, organic cherry pie filling
Instructions
First, to
make the crust, mix the flour, salt and sugar in a food processor; pulse to
mix. Add the butter and mix on low heat until the mixture looks like a coarse
meal (or sand). Add ice water 1 tablespoon at a time, pulsing until the mixture
just begins to moisten.
Then, grease
a hard surface and put paste in it. With floured hands, knead the dough about 3
times. Then carefully shape the dough into two discs.
Cover with saran wrap and
refrigerate for at least 8 hours.
Once the
dough has cooled, preheat the oven to 425 degrees F. Generously grease a muffin
pan with non-stick cooking spray and set aside.
Using a
floured rolling pin, roll out the dough to about ¼ inch thick. Using a cookie
cutter, cut out the circles of dough. You want enough dough to fill the entire
cavity of the muffin with a little overhang.
Insert the
dough into the cavities. Gently pour about 1½ tablespoons of cherry pie into
each dough cavity.
Bake for
about 11 minutes, or until the crust is golden and the filling is bubbling. Let
cool at least an hour then serve with whipped cream!
