PARMESAN CAULIFLOWER BITES
These
parmesan cauliflower bites are crunchy and addictive. They make a delicious
snack and are ready in under 30 minutes.
INGREDIENTS:
- 4 cups cauliflower florets
- 1/2 cup vegetable oil
- 2 large eggs, beaten
- 1 cup Panko*
- 1/2 cup all-purpose flour
- 1/4 cup freshly grated Parmesan
- 1 tablespoon Emeril’s Essence Creole Seasoning
DIRECTIONS:
First, heat
the vegetable oil in a large skillet over medium-high heat.
Then, in a
large bowl, combine Panko, Parmesan and Emeril’s Essence; put aside.
Work in
batches, dredge the cauliflower in the flour, dip in the eggs, then dredge in
the Panko mixture, pressing to coat.
Add
cauliflower to the pan, 5 or 6 at a time, and cook until evenly browned and
crisp, about 2-3 minutes. Transfer to a plate covered with absorbent paper.

*Panko is a
Japanese-style breadcrumb and can be found in the Asian section of your local
grocery store.
