Apricot Coconut Crumble Bars
A great
coconut apricot bar that can be personalized using your favorite jam.
Ingredients
- ¾ cup sugar
- pinch salt
- 1 tsp baking powder
- 1 cup butter , cut in small pieces
- 2 cups flour
- 2 cups dried coconut , medium cut
FOR THE
APRICOT FILLING
- 1 cup sugar
- 1½ cups boiling water
- 3 cups chopped dried apricots , (finely diced before measuring)
Instructions
TO MAKE THE
CRUMBLE
First, sift
together the flour, sugar, baking powder, coconut and salt.
Then, using
your hands or a pastry blender, cut the butter into dry ingredients until it is
completely incorporated and the mixture looks like a coarse and crumbly meal.
Press half
of the crumb mixture into the bottom of a well-greased 9 x 13-inch pan.
Pour and
spread the apricot filling evenly over the bottom crumbs.
Gently
sprinkle the remaining crumbs over the apricot filling and press gently.
Bake at 350
degrees F for 40 to 45 minutes or until the color is light golden brown. Let
cool completely in the pan before cutting into squares and serving.
TO MAKE
APRICOT FILLING
Simmer the
chopped apricots, sugar and water until the apricots are softened and the
mixture takes on a consistency similar to jam.
Alternatively,
you can use a good quality apricot jam. You will need about 2½ cups. Happy
