Almond Flour Pancakes






Preparing a batch of these ultra-soft almond flour pancakes for your next weekend brunch is a no-brainer. They are fast, gluten-free and can be dressed as you see fit.

INGREDIENTS
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon fine sea salt
  • 2 tablespoons olive oil (or any other liquid oil)
  • 2 tablespoons maple syrup (use sugar-free syrup for keto)
  • 1 cup blanched almond flour
  • 1 teaspoon baking powder

INSTRUCTIONS

SKILLET PANCAKES

First, preheat a skillet over medium-low heat on the stove. While it is heating, combine the almond flour, eggs, maple syrup (if used), olive oil, baking powder, vanilla and salt in a large bowl. The batter will be a little thicker than traditional pancake batter.

Then, grease the preheated pan with butter or olive oil, then pour 3 to 4 tablespoons of batter in the center of the pan (I use a little 1/4 cup). Use a spatula to spread the dough into a round pancake, about 1/4 to 1/2 inch thick.

Cook until small bubbles begin to form around the edges of the pancake, and as soon as the bottom is solid enough to turn (about 3 to 4 minutes of cooking time), use a spatula to turn the pancake and cook the other side, about 2 to 3 minutes more.

Repeat with the remaining batter, until all the pancakes are cooked. I usually get about 6 pancakes from this lot which are about 4 to 6 inches in diameter. Even if they are smaller, they are very generous! Serve hot with your favorite garnishes.

OVEN PANCAKES

Prepare the dough as shown above, but instead of using the stove, preheat the oven to 350 ° F and line a large baking sheet with parchment paper.

Pour the prepared dough by 1/4 cup onto the lined baking sheet and use a spoon or spatula to spread the dough into a round pancake shape until it reaches 1/4 inch thick. Leave about 1 inch between each pancake and repeat with the remaining batter until you have about 6 pancakes on the pan.

Bake at 350 ° F for 10 minutes. The pancakes should swell and you don't need to flip them over, as long as they look well cooked. I like to turn them over to serve, so the golden side is above. Serve hot with your favorite pancake toppings. Happy Cooking Time.
