Strawberry Cobbler
This
strawberry shoemaker recipe is a classic southern dessert! This simple
strawberry cobbler recipe quickly assembles and cooks in a thick, sweet, but
still tart strawberry layer, topped with a cake as a garnish.
INGREDIENTS
- 1/3 Cup Sugar
- 1/4 Cup Instant Tapioca
- 1/2 Teaspoon Fresh Lemon Juice
- 4 Cups Quartered Fresh Strawberries
Topping:
- 1/4 Cup Sugar
- 1/2 Teaspoon Salt
- 1 Teaspoon Baking Powder
- 1/4 Cup Boiling Water
- 1/4 Cup Brown Sugar Firmly Packed
- 1 Cup All-Purpose Flour
- 6 Tablespoons Cold Unsalted Butter Cut Into Small Pieces

- 1 1/2 Tablespoons Sugar
INSTRUCTIONS
First, preheat
the oven to 350 degrees. Spray an 8 X 8 inch cake pan with nonstick cooking
spray.
Then, rinse
the strawberries, let the whole berries dry, then cut them in half or four.
In a large
mixing bowl, carefully fold the cut strawberries, sugar, brown sugar, lemon
juice and tapioca. Pour the fruit mixture into the prepared baking dish.
Meanwhile,
in a medium bowl, combine all the topping ingredients, except for the butter
and boiling water. Add the butter and cut with a pastry blender or 2 knives
until the mixture looks like a coarse meal. Pour the boiling water into the
bowl and stir until the mixture collects.
Place the
filling paste by the large spoonful evenly on the fruit mixture.
Sprinkle the
top of the dough evenly with 1 1/2 tablespoons of sugar.
Place the
pan on a cookie sheet and bake in the preheated oven for about 35 minutes, or
until the filling is golden brown and the strawberries are tender.
