Garbage Salad







Garbage Salad






It is an incredibly easy recipe to prepare in ten minutes or less. Perfect for the days you think about.

INGREDIENTS
  • ½ tsp dried oregano
  • ¼ cup sliced Kalamata olives
  • 1 small garlic clove, grated
  • salt and pepper to taste
  • ½ cup thinly sliced red onion
  • 4 tbsp red wine vinegar
  • 2 tbsp extra virgin olive oil
  • 3 hearts of romaine, roughly chopped
  • ¾ cup roasted red pepper, thinly sliced
  • 1 cup sliced English cucumber
  • 3 oz cubed part-skim mozzarella
  • ¼ cup sliced Castelvetrano olives
  • 1 cup halved cherry tomatoes
  • 2 oz julienned Genoa salami, or other preferred salami
  • 12 cooked large shrimp, chilled
  • salt and pepper, to taste
  • 4 artichokes hearts, canned, quartered

INSTRUCTIONS

First, combine red wine vinegar, extra virgin olive oil, dried oregano and garlic in a small Mason jar. Shake the dressing until smooth. Season with salt and pepper. Put aside.

Then, in a large bowl, combine romaine lettuce, roasted red peppers, red onions, olives, tomatoes, cucumbers, salami, mozzarella and artichoke hearts in a large bowl. Season with salt and pepper according to your taste.

Add 2-3 tablespoons of the reserved dressing and mix the salad until well blended.

Garnish the shrimp salad and serve an extra vinaigrette on the side.
