SOFT AND BUTTERY SUGAR BUNS
Sweet and
buttered rolls with very nice golden tops. They are generously sprinkled with
sugar and the centers ooze with butter.
Ingredients
- 1 Egg
- 65 g Milk
- 3/4 tsp Salt
- 355 g Bread Flour
- 33 g Butter
- 2 Tbsp Milk Powder
- 30 g Brown Sugar
- 2 1/2 Tbsp Brown Sugar
- 168 g Water
- 1 1/8 tsp Instant Dry Yeast
- 30 g Salted Butter
Instructions
First, in a
saucepan, combine the bread flour and water. Mix with a whisk or spatula until
there are no more lumps. Cook over medium-low heat, stirring constantly until
the mixture becomes thicker.
Then, once
you see lines appear, it is ready. Remove from heat and transfer to a clean
bowl to allow it to cool.
Whisk the
egg. Reserve 45 grams for the dough. Set aside 10 grams, whipped with 1
teaspoon of water to make an egg.
In the bowl
of the stand mixer, add the salt, bread flour, instant dry yeast, brown sugar,
milk powder, butter, 45 grams of beaten egg,
Using the
dough hook, knead until the dough collects and begins to become elastic and
sticky but not sticky for about 10 to 15 minutes.
Place the
dough in a large greased bowl, covered with cling film or a cloth.
Let it rise
in a warm place for 1 hour, or until it doubles in size.
Hit the
dough to release the air. Transfer the dough to a clean floured surface and
divide into 12 equal portions. Form each dough into a ball.
Flatten the
dough and shape it into an oval shape. Place the rolls in molds covered with
parchment paper. Leave to rise for another 50 minutes, or until doubled in
size.
Split the
center of the bun with scissors. Brush with egg. Place the salted butter on the
slit and garnish with sea salt and brown sugar.
Bake in
preheated oven for 15 to 20 minutes or until golden.
Remove from
oven and transfer to a rack to cool.
