Shrimp Scampi Flatbread





Shrimp Scampi Flatbread






I love prawns with prawns and I also like flatbread, so it appeals to my taste buds. Can be made as an aperitif, lunch or for a quick dinner that would go well with a salad or soup. "

Ingredients
  • ½ teaspoon kosher salt
  • 1 teaspoon fresh lemon juice
  • 1 teaspoon olive oil
  • 3 cloves garlic, finely minced
  • 3 tablespoons butter
  • 8 ounces raw shrimp, peeled & deveined (I used 31-50 count)
  • 1 8-9" flatbread (or thin pizza crust)
  • 4 ounces Italian cheese blend, shredded (I used a blend of mozzarella, Romano, and Parmesan)
  • ¼ teaspoon crushed red pepper flakes (more to taste)

Instructions

First, preheat the oven to 425. (see note)

Then, melt the butter and heat the olive oil in a medium saucepan. Add the shrimp, garlic, salt and pepper. Cook over medium-high heat, stirring occasionally, until the shrimp are pink and the garlic is fragrant, being very careful not to burn the garlic (about 5 minutes). Mix with lemon juice.

Tilt the pan to the side so that the liquid collects. Pour it over the flatbread and brush it so that it mainly covers the crust, making sure to hit the edges (this will help it brown).

Sprinkle the cheese on top and place the shrimp. I like to put them in the cheese so that it keeps them in place.

Bake for 7 to 9 minutes (or check your flatbread packaging for time instructions. Happy Cooking Time.

Remarks
Be sure to check the packaging of your flatbread for baking temperature recommendations. They will vary from brand to brand and will also vary depending on whether or not you use frozen or thawed flatbread.
