Easy Baked Potato Soup






This creamy potato soup recipe is so good! Learn how to make the best cheese potato soup with bacon in a creamy base (without heavy cream). A quick 30 minute recipe that is a total comfort food.

Ingredients
  • 1/4 cup flour
  • 4 cups whole milk
  • 6 strips bacon cut into small pieces
  • 1 cup chicken broth
  • 1 clove garlic minced
  • Salt & pepper to taste
  • 4 large Russet potatoes diced
  • 3/4 cup sour cream or more to taste
  • 3/4 cup grated cheddar cheese or more to taste
  • 1/2 medium onion chopped
  • Scallions chopped, to taste

Instructions

First, cut the bacon and add it to a pot (I use kitchen scissors to facilitate this work). Fry the bacon over medium-high heat until it is nice and crisp (about 10 minutes).

Then, meanwhile, prepare your onion and potatoes. You can peel the potatoes like I did, or rub them and leave them unpeeled if you prefer.

Once the bacon is cooked, take it out of the pot and set it aside. I like to leave about half the bacon fat in the jar, about 2 tablespoons or so (it's good to watch it). Discard remaining bacon fat or set aside for use in another recipe.

Add the onion to the pan and fry for 5 minutes.

Stir in the flour and cook for about a minute.

Whisk the milk slowly until the flour is well melted and there are no more lumps.

Add the chicken broth, garlic and potatoes. Increase the heat to high. Scrape all the brown pieces from the bottom of the pot. When the soup is almost boiling, reduce the heat and lightly cover the pan with the lid. Simmer the soup for 20 minutes (you want it to simmer quite gently).

While the soup cooks, prepare the cheddar, green onions and sour cream.

The potatoes should fall apart now. I like to take my potato masher and mash the potatoes a little directly in the pot, but if you want to leave the potatoes as they are, that's fine too.

Stir in sour cream and most of the cheddar and bacon (reserve for garnishing the soup). Season the soup with salt and pepper as needed. Top each bowl with the remaining green onions and cheddar and bacon. Happy Cooking Time.
