COFFEE WALNUT LOAF CAKE






The coffee and nut cake is one of those popular classics, traditionally it is made like a sandwich cake, in this one, although I made it like a bread cake. It is gluten-free and dairy-free and goes very well with a good hot infusion!

Ingredients
  • ½ cup canola oil
  • 1 cup white sugar
  • 2 teaspoons baking powder
  • 2 eggs room temperature
  • ¼ cup strongly brewed coffee
  • 2 teaspoons ground cinnamon
  • ½ cup walnuts roasted and chopped
  • 1 ½ cups plain flour
  • ¼ cup dairy free milk such as almond, oat or soy

Coffee Icing
  • 1 cup icing sugar
  • 1-2 tablespoons strongly brewed coffee
  • ½ - 1 tablespoon dairy free butter*

Instructions

First, preheat the oven to 160 ° C and grease and line an 8 x 4 inch loaf pan with parchment paper.

Then, in a medium bowl, add the flour, baking powder and cinnamon. Use a whisk to blend until blended. Put aside.

In a large bowl, add the oil and sugar and whisk together. Add the eggs and continue to whisk until all are combined. Slowly add the dry ingredients in three batches, alternating with coffee and milk, mixing between each until the dough collects. It will be quite thick. Fold the nuts with a spatula and pour the mixture into the covered and greased pan.

Bake for 50 to 60 minutes or until a skewer once inserted comes out clean. Let cool in the pan for 10 minutes before unmolding on a rack to cool completely.

To frost the coffee, add the butter and icing sugar to a bowl and start beating with an electric hand mixer or a stand mixer with the paddle attached. 
Slowly add the coffee ½ a tablespoon at a time until the desired consistency is reached, being careful not to make it too thin. If this happens, just add more icing sugar to thicken. Spread the frosting on top of the cooled cake and garnish with more crushed nuts, if desired. Slice and serve.

Remarks
The cooking time can vary depending on the size of your bread pan and even your individual oven. The cake is baked when a skewer inserted in the center comes out clean. If not done after 50 minutes, check in 5 minute increments until cooked.
