Crunchy Honey Lime Chicken Recipe
My family is
always asking me to find new ways to eat chicken. They love chicken ... but
they miss the ho-hum recipes a bit. So I'm excited when I come across a new
chicken recipe they love! He is one of them.
Ingredients
- 1 egg
- 1 teaspoon chili powder
- 3/4 teaspoon kosher salt
- 2 Tablespoons milk
- 2 large limes cut into wedges
- 1.5 cups panko breadcrumbs
- 1/4 cup honey
- 1/4 teaspoon cayenne pepper I skipped it and used 1/2 teaspoon paprika instead
- 1/2 teaspoon ground black pepper
- 2 Tablespoons olive oil I also added 1 Tablespoon of butter
- 1/4 cup all-purpose flour
- 1 lb boneless skinless chicken tenders (I used chicken breast cut into strips)
Instructions
First, in a
medium bowl, whisk together the flour, chili powder, salt, pepper and cayenne
pepper (or paprika). Add the egg and milk and whisk until smooth.
Then, add
the chicken fillets to the flour-egg mixture and toss to coat.
Place the
panko breadcrumbs on a medium plate. One by one, coat each tender chicken with
panko and place on a clean plate.
Heat the oil
and butter in a large skillet over medium heat.
Cook chicken
until slightly brown, about 2 minutes per side. Remove to a plate and let cool
slightly.
Squeeze the
lime juice over the chicken and drizzle it with honey.
