Bacon Pineapple BBQ Chicken
These upside
down pineapple chicken legs are covered in a mild, slightly spicy sauce that is
so good you won't leave any!
Ingredients
- 2 green onions diced
- 1 cup pineapple diced
- 4 chicken breasts
- 1 cup Mozzarella cheese shredded
- 6 strips bacon cooked and diced
- 1 cup BBQ sauce
- 1/4 red onion sliced (about 1/4 cup) + extra
Instructions
First, preheat
the oven to 375 F.
Then, add
the chicken breasts to the pan. Using a spoon, brush the chicken breasts with
BBQ sauce.
Garnish with
diced pineapple.
Add chopped
cooked bacon to the chicken.
Garnish with
sliced red onion.
Garnish with
grated mozzarella cheese.
Bake for
25-30 minutes, uncovered, until the chicken is cooked through and no longer
pink in the center. Grill the last 4 minutes if desired.
To serve, garnish
the chicken with a small amount of additional diced pineapple, some of the
remaining sliced red onion and diced green onions.
