COOKIE DOUGH BROWNIES







Brownies, layered cookie dough with butter chocolate chips and chocolate ganache.

Ingredients

Brownies
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 1/3 cups flour
  • 1/2 tsp salt
  • 2 1/4 cups white sugar
  • 3/4 cup butter , melted
  • 3/4 cup unsweetened cocoa powder
  • 1 cup dark chocolate chips (You can use any type of chocolate chips you'd like)

Cookie Dough
  • 2 teaspoons vanilla extract
  • 2/3 cup packed brown sugar
  • 3/4 cups all-purpose flour
  • 1/2 cup granulated sugar
  • ¼ teaspoon kosher salt
  • 1 1/2 cups mini semisweet chocolate chips
  • 1 cup softened unsalted butter
  • 1/4 cup water , but I like leaving these out at room temperature]

Instructions

Brownie layer:

First, preheat the oven to 350 degrees. Butter and flour or use a cooking spray in a 13x9 pan.

Then, in a large bowl, add the butter, sugar, vanilla and eggs.

Add cocoa powder, chocolate chips and salt and whisk until smooth.

Add the flour and whisk until everything is well combined (do not whisk)

Bake for about 25 to 28 minutes or just until done in the center.

Remove and let cool on a rack until it is no longer hot.

Layer of cookie dough:

First, in a bowl with a mixer or stand mixer, cream the butter and sugars until they are noticeably clearer and very soft.

Then, it usually takes a few minutes.

Add the water and vanilla and mix for a few seconds.

Add the flour, salt and a cup of chocolate chips and mix until everything is well combined.

The chips are so small that they will not break in there.

If you are worried or using another, more fragile, mixture, use a spatula or whisk to incorporate the mixtures.

Spread cookie dough over cooled brownies and sprinkle on remaining half cup of mini chocolate chips.

Press them very lightly on the top so that they "stick".
