CAJUN POTATO SALAD







CAJUN POTATO SALAD






This smoky, tasty Cajun potato salad uses the magic of blackened seasoning to take it to the next level.

Ingredients
  • 1 -1/2 cups mayo
  • 2 lbs of shrimp
  • 5 pounds new potatoes washed and cut into equal bite-size pieces
  • 1/2 cup celery chopped fine
  • 2 tablespoon creole mustard
  • 6 boiled eggs sliced eggs
  • 1/2 teaspoon black pepper
  • 1 tablespoon Worcestershire
  • 1/2 teaspoon granulated garlic
  • 1/4 cup sweet relish
  • 2 teaspoons Cajun seasoning
  • 1/4 cup crab boil seasoning
  • 1/2 lbs bacon cooked hard and crumbled.

Instructions

First, wash and cut new potatoes of similar size.

Then, boil them until tender in a seasoning to boil crab / shrimp in a large saucepan.

Drain the potato water in another pot. Leave the potatoes in the pot.

Bring the water to a boil and add the shrimp.

Cook the shrimp until they are pink. DO NOT overcook.

Do not wash the potatoes. Mayonnaise cuts spices.

Remove the shrimp from the water. Peel and cut if necessary.

Combine potatoes, shrimp, chopped celery, sliced eggs and crumbled bacon.

In another bowl, combine mayonnaise, Creole mustard, Worcestershire, 
Tony Chachere Creole Seasoning, pepper and garlic powder and mix well.

Mix the dressing well with the potato, shrimp, celery, eggs and bacon.

Refrigerate. Happy cooking Time.
