BROCCOLI AND CHEESE RISOTTO








Roasted garlic and tasty broccoli collide with creamy parmesan risotto in a killer side dish that is incredibly easy to toss together and ready in under 30 minutes!

Ingredients
  • 2 cups arborio rice
  • ½ onion diced
  • ½ cup white wine
  • 4 cups vegetable broth
  • 1 c shredded cheddar
  • 1 c broccoli cooked, finely diced
  • 1/2 c green onion diced
  • 1 tablespoon Extra Virgin Olive Oil
  • salt and pepper to taste

Instructions

First, pour 1 tablespoon of extra virgin olive oil into the pan. Heat a skillet over medium heat, brown the green onions and chopped onion. Once the onions are cooked, add the dry rice and sauté for 1 minute.

Then add your wine to the pan. Let the liquid cook for about 1 minute. Then add 2 cups of vegetable broth. Cook the broth, stirring constantly to avoid burning. Once the liquid is cooked, add 2 more cups. Continue this process until all of your liquids are gone and your rice is tender. This process will take approximately 20 minutes.

Finally, season with salt and pepper, stir in the broccoli and diced cheese. Happy Cooking Time.
