WHITE CHOCOLATE AND PISTACHIO BLONDIES!
Sweet, sweet
and very delicious, these blondies with white chocolate and pistachio will
please. In addition, they are gluten-free too!
Ingredients
Blondies
- 3 Large Eggs
- 175g Plain Flour
- 250 Unsalted Butter, softened
- 250g caster sugar
- 125g Chopped Pistachios
- 250g White Chocolate Chips
Decoration
- 50g Chopped Pistachios
- 100g White Chocolate, melted
Instructions
First, preheat
your oven to 180C / 160C Fan, and grease and line a 9x9 inch square pan - set
aside.
Then, melt
the butter carefully in the microwave, stir until smooth.
Using an
electric mixer / stand mixer, whisk together the eggs and powdered sugar for a
few minutes until the color turns pale, looks very much like foam and is double
the volume. origin of the amount of eggs + sugar! You will know it is done
because when you lift the whisk out of the mixture, it should leave a trail for
a few seconds before disappearing!
While you
whisk, beat the melted butter little by little, making sure that each piece of
butter is well mixed before adding a little more.
Sift
ordinary flour and mix the mixture. Add the chocolate chips and pistachios and
fold again.
Pour the
mixture into the mold and bake for 30 to 35 minutes ** or until it is cooked. I
checked mine with a skewer and it came out clean when cooked! Let the Blondies
cool completely in the box.
Drizzle the
melted chocolate and sprinkle over the additional chopped pistachios - allow
the chocolate to harden and cut into portions. I made 4 × 4 to get 16 decent
size pieces!
