NO BAKE OREO CHEESECAKE RECIPE
This No Bake
Oreo Cheesecake is light, fluffy and creamy and loaded with Oreo pieces! Made
without an oven and just a handful of ingredients!
Ingredients
- 2 teaspoon vanilla extract
- 3/4 cup whipping cream
- 350 g (12.3oz) cream cheese, softened (full fat)
- 3/4 cup light sour cream (or regular)
- 60 g (1/2 stick / 1/4 cup) unsalted butter, melted
- 300 g (10.5oz) white chocolate
- 480 g (3.5 packs) oreo cookies (approximately 49 cookies)
Instructions
First, grease
and line an 8-inch round cake pan with parchment paper.
Then, melt
white chocolate in 20 second increments in the microwave, stirring well between
each until just melted.
Whip the
cream into soft peaks and return to the refrigerator.
Use a food
processor to process 1 1/2 packets of oreos to crumble. Add the melted butter
and press into the base of the prepared pan until firm. Place in the
refrigerator.
With the
remaining oreos, roughly chop 1 package into small pieces (about 8 pieces per
oreo). Cut 8 oreos in half and cut the rest into coarse crumbs.
Use a hand
mixer to beat the cream cheese until smooth. Add the melted chocolate, sour
cream and vanilla and beat.
Fold through
the whipped cream until just combined, then fold gently through the 1 bag of
chopped oreos.
Spread the
cheesecake mixture on the base and level as much as possible.
Place in the
refrigerator to last at least 4 hours or overnight (better).
Decorate the
top with the oreos and oreo crumbs cut in half. If desired, garnish with shaved
chocolate like this.
