Classic Stuffed Peppers






Classic Stuffed Peppers






A mixture of pan-fried ground beef, onions and rice is stuffed into fresh green peppers and cooked until tender and delicious.

Ingredients
  • 1/2 Cup Rice
  • 1 Can Diced Tomatoes
  • 1 Medium Onion Chopped
  • 1 lb. Ground Beef
  • 1 Tbsp. Tomato Paste
  • 1 Tsp. Dried Oregano
  • Pepper
  • 2 Cloves Garlic Minced
  • Salt
  • 2 Tbsp. Extra Virgin Olive Oil
  • 6 Bell Peppers Cut the tops off, and clean out the inside completely.
  • 1 Cup Shredded Monterey Jack Cheese Colby Jack Cheese can be used as a substitute

Instructions

First, start by preheating your oven to 400 °. In a small saucepan, prepare your rice according to the instructions on the packaging. I always buy ready rice which is prepackaged and it usually takes about 8-10 minutes. You simply immerse the bag of rice in the water in the pan. When it starts to boil, lower your pan to medium heat and let it continue the rest of the time. 
Empty the water and let your rice sit on the side until you are ready.

Then, in a large saucepan, add your olive oil and let it heat. Add your chopped onions and cook them until tender, which usually takes about 5 minutes.

Stir in your tablespoon of tomato paste, add your 2 garlic cloves and cook together for about a minute.

Now is the time to add your ground beef to everything you've mixed so far. 
Continue to cook and break the meat with a large spoon. Continue to cook until the meat is cooked through and is no longer pink. It usually takes about 6 to 7 minutes. Once cooked, be sure to drain the fat.

After draining the fat, return the beef mixture to the pan, then stir in the cooked rice and diced tomatoes. Season everything with salt, pepper and oregano. Simmer until the liquid has reduced. It usually only takes about 5 minutes.

Place a little olive oil on a spoon and pour it over your peppers, then start filling the peppers with your mixture and placing them in a 9 × 12/13 baking dish.

Before placing the peppers in the oven, garnish with Monterey or Colby Jack Cheese. Now that you are done, cover the dish with aluminum foil and place it in the oven.

Cook the peppers for about 35 minutes or until they are tender, uncover and cook another 8 to 10 minutes and SERVE!
