Sweet Potato Dinner Rolls
Sweet Potato
Dinner Rolls are light, fluffy and filled with color and flavor from sweet
potatoes. They’re the perfect addition to any Fall or holiday menu!
Ingredients
- 3 whole eggs
- 1 teaspoon salt
- 5 1/2 - 6 cups flour
- 1 cup sweet potato mashed
- 3 Tablespoons honey
- 3 Tablespoons butter melted
- 2 1/4 teaspoons yeast
- 1 cup milk warmed
- 3 Tablespoons butter softened
Instructions
First, in a
large bowl of a stand mixer, add the milk, yeast and honey. Let sit for 5
minutes until boiling.
Then, add
the sweet potato, eggs, butter and salt. Mix
With the
mixer slowly turning, add the flour. Continue adding flour until the dough
collects and begins to form a ball. You might not use all the flour.
Knead in the
blender for 5 minutes.
Remove from
mixing bowl and place in a large greased bowl. Cover and let rise until
doubled; 1 - 1 1/2 hours.
Remove the
lid and perforate the dough.
Divide the
dough into quarters. Working with a quarter at a time, divide each fourth into
six equal parts. Form rolls.
To make the
clover leaf shape, keep dividing each part into thirds. Roll each third into
small balls. Place three scoops in a greased muffin pan.
Cover lightly
and let rise 30 minutes.
Lightly
brush the top of the rolls with melted butter.
Bake in the
preheated 375 degree oven for 15-18 minutes.
Remove from
oven and let cool slightly for a few minutes on a baking rack.
Remove from
molds or baking sheet and continue to cool.
