Stuffed zucchini boats
Easy stuffed
zucchini is the perfect way to enjoy your fresh summer zucchini! Tender
zucchini stuffed with a silky meat sauce, garnished with cheese and baked in
the oven until tender.
INGREDIENTS
- 2 teaspoons olive oil
- 2 cups marinara sauce
- salt and pepper to taste
- 1/2 cup onion finely diced
- 1 teaspoon minced garlic
- 1 tablespoon chopped parsley
- 1 pound mild Italian sausage casings removed
- cooking spray
- 1/2 teaspoon dried Italian seasoning
- 4 medium zucchini
- 3/4 cup shredded mozzarella cheese
INSTRUCTIONS
First, preheat
the oven to 400 degrees F. Coat a large rectangular baking dish with cooking
spray.
Then, cut
the zucchini in half lengthwise, then cut the ends of the stalk. Use a spoon to
carefully remove the flesh from the zucchini.
Sprinkle the
Italian seasoning, salt and pepper on the zucchini shells. Place the zucchini
in the baking dish.
Heat the
olive oil in a large saucepan over medium-high heat. Add the sausage and cook
for 4 to 5 minutes, breaking the meat with a spatula.
Add the
onion and cook for another 4 minutes or until the onion is softened.
Add the
garlic and cook for 30 seconds.
Season the
sausage and vegetable mixture with salt and pepper.
Pour the
marinara sauce into the pan and bring to a boil; cook for 5 minutes.
Divide the
meat mixture evenly among the zucchini shells, then garnish with grated cheese.
Bake for 25
minutes or until the zucchini is tender and the cheese is melted and golden.
Sprinkle
with parsley, then serve.
