MINI TUNA AND SWEET CORN
Delicious,
easy and fun to make, these family-friendly frittatas are a great way to bring
everyone together in the kitchen.
Ingredients
- 5 eggs
- ⅔ cup of cottage cheese 160ml
- 90/3 oz of cheddar grated
- ½ cup of frozen sweetcorn 120ml
- 200 g /7oz tin of tuna
- 2 spring onions finely chopped
- black pepper
Instructions
First, preheat
the oven to 180 ° C or 350 ° F (gas mark 4).
Then, combine
spring onion, tuna and sweet corn in a bowl and season with black pepper.
Put cottage
cheese and eggs in a blender and mix until smooth
Gently
incorporate this into the tuna mixture.
Grease a
muffin pan and pour the mixture evenly in each space (make about 8, but it will
depend on the size of the tray)
Garnish with
grated cheddar
Place in the
oven and bake for about 30 minutes until the cheese has melted and is golden.
Optional:
for a base of hash browns, add a little grated potato to the muffin pan, spray
with oil and cook until lightly browned. Then remove from the oven and add the
mixture of eggs and tuna and cook as indicated above.
